MIP 12 Tempering Tunnel Operation

This video details the basic operation of our popular MIP 12 Microwave Tempering Tunnel. Our flagship system can temper up to 17,000 pounds (7,700 kilograms) of product per hour.

Continuous tempering enables precise control of product temperature for further processing, such as slicing, dicing, forming, and molding. Product quality and yield are improved and drip loss is minimized. Flavor and protein compounds remain in the product and are passed along to the consumer.

The MIP 12 Tempering Tunnel system consists of one eight (8) foot long heavy duty stainless steel multi-mode cavity. The cavity is equipped with an access door for easy cleaning, along with a sloped bottom pan leading to a waste collection pipe system. The cavity comes equipped with two patented polarized microwave feeds, for enhance energy distribution.

Our new slotted polar cap (SPC) works in combination with our patented polarizer design to eliminate the need for more than two microwave feeds. This eliminates the maintenance costs associated with traditional rotary antennas. Suppression tunnels on the input and output prevent microwave leakage into the surrounding work area. The cavity features half and full product detection and arc sensing.

The product flows through the oven system on a 20-inch wide positive drive, articulated belt. We have options available for non-standard belt sizes. The standard conveyor belt is made of microwave transparent material. While our standard tunnels accommodate boxes 20″ by 10″ (50 cm by 25 cm), other tunnel sizes are also available.

Additional features include arc detection, emission sensors and safety interlocks on the door. The emission sensors can be placed on either end of the tunnel. The safety interlocks conforms to all applicable government safety standards.
