Our Small Batch Tempering Oven System is the solution for batch tempering of frozen meat, fish, poultry, fruit, or bakery products. The tempering unit operates at 915 MHz and produces approximately 120,000 BTUs per hour. The full system is comprised of an oven and its own microwave generator, with waveguides connecting the two. It provides constant invariable heating, and enables tempering from low starting temperatures. The MIP 4 allows for predictable temperature increase and is capable of attaining exact final target temperatures.
With a magnetron microwave power source, the MIP 4 generator is capable of outputting 75 kW of microwave energy. Typically, this microwave oven can temper a 55-pound (25 kg) box of beef in 65 seconds. We recommend the MIP 4 for food service operations that need to temper ordinary amounts of food rapidly and efficiently. While one ideal setting for this mini batch tempering system is aboard a cruise ship, the MIP4 operates successfully in locations where production space may be limited.
A Small Batch Tempering System
The microwave tempering oven is powered by a 35 kW generator. Although the complete system arrives with a full 75 kW generator, the power level is then control limited down to 35kW.
The MIP 4 is capable of tempering up to 1,500 pounds (680 kg) of raw, frozen or uncooked product per hour. With the touch of a button, the MIP 4 can raise the average temperature of frozen product. The typical range of temperature increase is from anywhere between 22 and 29 degrees Fahrenheit (-2 degrees Celsius).
Dimensionally, the oven is 3 feet (width) by 4 feet (height), or 0.9 meters by 1.3 meters. It is manufactured of stainless steel, with a door and key interlock. The door and key interlock allows users to safely open, close, operate, lock and wash the tempering oven.
