Our Continuous Tempering Tunnel simplifies the food tempering process from start to finish. This system offers precise control of product temperature for further processing, such as grinding, dicing, slicing, molding, and forming. The MIP 12 is capable of greatly reducing tempering time (from days to minutes!) for frozen meat, fish, poultry, fruit or bakery products. This system is able to temper up to 17,000 pounds (7,700 kg) of 0° F (-18° C) product per hour.
A Tunnel System for Continuous Microwave Tempering
The standard MIP 12 system consists of a single 4-foot by 4-foot by 8-foot long tunnel (1.2 meters by 1.2 meters by 2.5 meters). It is compatible with all 75 kW microwave generators. For additional power and to increase production output, additional generators can be added to the system. The upper limit recommendation is a maximum of four generators.
We consider the MIP 12 our flagship system. It offers improved product quality and yield, and drip loss minimization. We consider taste and sustenance as end-use factors of the utmost importance. Flavor and protein compounds remain in the product, and passed along to the consumer.
The product flows through the oven system on a 20-inch wide positive drive, articulated belt. We have options available for non-standard belt sizes. The standard conveyor belt is made of microwave transparent material. While our standard tunnels accommodate boxes 20″ by 10″ (50 cm by 25 cm), other tunnel sizes are also available.
Additional features include arc detection, emission sensors and safety interlocks on the door. The emission sensors can be placed on either end of the tunnel. The safety interlocks conforms to all applicable government safety standards.
